Enchilada Festival March 21st - April 18th

At Maya, I cook the food that I grew up eating in Mexico. Homemade sauces, freshly warmed tortillas; this is the comfort food that I love to eat at any time of day. I’m proud to share my culinary heritage with you, and I hope that you enjoy it time and time again. To spice things up, we offer special menus throughout the year, inspired by holidays, festivals and some of my favorite dishes from across Mexico. Enchilada- meaning "flute seasoned with chile,” we are excited to introduce guests Maya's Enchilada Festival, a celebration of culinary tradition and variety.

- ALMENDRADA: pork carnitas / almond mole sauce / pickled onions / pomegranate gastrique
- RES CON CHILE MORITA: slow cooked short rib / chile morita sauce / red onion / cherry tomatoes
- MEXICO CITY: braised veal tongue / green mole / cotija cheese / achiote oil
- VEGETARIAN: plantain tortillas / black mole / tofu / zucchini /yellow squash
